SUPER QUICK & EASY Low carb Brownies (Gluten & Dairy Free)

These brownies are perfect!
Ingredients:
2 cups almond flour
1/4 cup dark cocoa powder
1/2 cup Lakanto Golden Monkfruit sweetener
1/2 cup Lakanto Baking sweetener*
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon (optional)**see notes
1/4 cup water
3 eggs
1 cup mayonnaise
1 teaspoon vanilla extract (or 1/2 teaspoon almond extract)

Method:
Preheat oven to 350*. Line the bottom of an 8 inch square baking pan with parchment paper. Lightly coat the sides of the pan with cooking spray.
In a large bowl, stir together all of the dry ingredients, with a whisk, to remove any lumps. Make a well in the center of the dry ingredients. Add the remaining ingredients and stir until well blended. Pour batter into the prepared dish. Bake for 25 to 30 minutes, or until a toothpick inserted comes out mostly clean. (A little bit of batter is okay, but if the pick has a thick coating of batter on it, return the pan to the oven for 2 couple minutes longer. Cool in the pan for at least 10 minutes. Cut into 20 equal squares. Store in an airtight container in the refrigerator.


Makes 20 brownies.

Nutritional info per brownie (without cinnamon) approximately: 
155 calories ~ 14.7 grams fat ~ 1.6 grams carbs ~ 3.6 grams protein 

*Lakanto Baking Sweetener has a finer texture than the regular Classic Sweetener. If you do not have the Baking Sweetener in your pantry, you can process the Classic Sweetener in a food processor, to create a finer texture.

Notes:
These Low carb brownies are delicious and cake-like. (My husband and I think they taste best chilled.) Each one has about 170 calories, 15 grams fat, 2 grams carbs and 3.5 grams protein.

**I made these for my granddaughter, who has type I diabetes, on her birthday. She loved them and suggested I make another batch with cinnamon. Great idea...tastes like Mexican Hot Chocolate.**
