Mexican Shrimp Toast

These Shrimp Toast appetizers are quite
simple to make and a favorite in our home.

Ingredients:
2 (6 inch) un-split french rolls or 1 baguette
1 cup cooked, shelled and deveined small "salad" shrimp, finely chopped
1/2 cup finely shredded jack cheese
1/4 cup mayonnaise
Tabasco or sriracha sauce, to taste

Method:
Cut rolls into 24 slices, about 3/8 inch thick. Place the sliced bread on a foil lined baking sheet. Lightly toast both sides under the oven broiler.


Mix remaining ingredients. Spread on the toasted slices of bread. Broil, until the cheese mixture is melted and bubbly. Cool 5 minutes before serving. Makes 6 -8 appetizer servings.

Note: I came across this recipe in 1984. My oldest son, Sean, was the only 3 year old in preschool with "Mexican Shrimp Toast" in his lunch box.
