Almond Butter Chocolate Balls (Dairy Free ~ Vegan & VERY LOW CARB)

These are delicious, low carb truffles!
Ingredients:
1/2 cup all natural almond butter**
1/2 cup unsweetened dark cocoa powder
2 tablespoons almond flour
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
6 tablespoons Erythritol or Lakanto Classic Sweetener with Monkfruit Extract
1/2 cup toasted or roasted almonds (salted or unsalted)***

Method:
Add all of the ingredients, except for the almonds, in a small bowl. Mix thoroughly, with a spoon, until the ingredients are well mixed. Cover and chill in the refrigerator, for 30 minutes, to make firm.
Grind the almonds in a food processor, or chop very finely. Transfer to a small dish.



Using your hands, roll small spoonfuls of the chocolate mixture into 24 balls.
Roll the balls in the ground almonds to coat, until they are fully covered on all sides.
Makes 24 servings. Store in an airtight container, in the refrigerator.

**Peanut butter may be substituted for the almond butter.

***To make Toasted Almonds: 
Preheat oven to 300*. Place the almonds in a pie pan, or on a baking sheet. Bake for 3 minutes. Remove from the oven, stir and bake for another 3 minutes. (Do not overcook: they should be toasted, not burned.) Set aside to cool. Or, unsweetened shredded coconut may be substituted for the almonds and does not need to be processed or chopped.

Note: 
These are a healthy alternative to candy for adults and kids.

Nutritional info per truffle approximately:
60 calories ~ 5 grams fat ~ 1.5 grams net carbs ~ 2 grams protein.
