Low Carb Mock Abalone (Gluten & Dairy Free)

This is a different, simple and delicious way 
to prepare chicken breasts.
Ingredients:
4 boneless & skinless chicken or turkey breasts
1/2 cup clam juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
3/4 cup pork panko 

3/4 cup coconut flour
cooking oil
tartar sauce 


Fine pork rind crumbs
(Can be purchased at Walmart & Amazon)
Method:
Prepare tartar sauce and chill to blend flavors. Pound the poultry breast until flattened. Marinate overnight in mixture of  clam juice, worcestershire sauce and garlic. Remove and roll in crumb mixture. Fry quickly in very hot oil, turning once. Do not overcook. Serve with lemon wedges and tartar sauce. Makes 4 servings.


Tartar Sauce

Ingredients: 
1 cup mayonnaise
1/2 cup finely minced dill pickle
1/2 cup chopped parsley
1 tablespoon lemon juice
1 teaspoon minced chives

Method:
Combine all ingredients in a bowl. Cover and chill.

Note: My husband wasn't certain that he would like the taste of "Mock Abalone", but he was pleasantly surprised. The meat had a great flavor. It was very tender and moist.

Peanut Butter Cheesecake Mousse (Low Carb & Sugar Free)

Light, Fluffy & Delicious little parfaits
topped with chocolate chips or grated chocolate.
Ingredients:
8 ounces cream cheese, softened at room temperature
1/4 cup + 1/2 tablespoon (1 1/2 teaspoons) natural peanut butter (sugar free)
2/3 cup Lakanto Powdered Monkfruit Sweetener
1 teaspoon pure vanilla extract
1 cup heavy whipping cream
1/3 cup (1 1/2 ounces) sugar free chocolate chips (optional)**
3 -4 tablespoons grated sugar free chocolate bar (optional)

Method:
Place a medium mixing bowl in the freezer to chill. 
Add the cream cheese, peanut butter, sweetener and vanilla to a separate mixing bowl. Beat until thoroughly blended, smooth and creamy. Set aside.
Add the cream to the chilled bowl and whip at high speed until soft peaks form (& hold their shape). 

Combine the whipped cream and peanut butter mixture, on low speed, until all of the ingredients are well blended.  Divide the mousse into 6 parfait cups. Refrigerate for 2 hours or overnight. If desired, garnish with chocolate chips or grated chocolate. Makes 6 servings.

**I used Lily's sugar free milk chocolate chips.

71 calories ~ 35.7 grams fat ~ 6 grams net carbs ~ 7 grams protein

Notes: This Mousse is so delicious, light and fluffy! It also is quite rich, so I was very satisfied with just half of one serving. Which cut the net carbs in half, too. My husband said it was "excellent".
