KETO Egg Fast Waffles & Crepes (EASY & Delicious!)

One Egg Waffle with butter and
powdered monkfruit sweetener.
Ingredients:
4 ounces cream cheese (room temperature or heated for 20 seconds in microwave oven)
4 organic cage free eggs
2 teaspoons Lakanto Powdered Monkfruit sweetener (or granulated sweetener of choice)
1 teaspoon cinnamon
coconut oil spray
butter
extra powdered sweetener or sugar free syrup

Method:
Place all of the ingredients into a blender container. Blend until well mixed and smooth.
Set aside for 2 minutes so that the bubbles can settle.

For Waffles:
Preheat a waffle iron. Lightly grease with coconut oil spray. Pour about half of the batter onto the waffle iron. Cook like a regular waffle. Repeat with the remaining batter. Makes about 2 1/2 waffles. 

For Crepes/ Pancakes:
Grease a hot skillet, or griddle, with butter. Pour 1/2 cup of batter onto the prepared pan, Cook for 2 to 3 minutes, or until golden and a pancake turner can easily slide under the crepe. Flip and cook for another minute. Repeat with remaining batter. Makes 4 pancakes.

Serve with butter and a sprinkling of powdered sweetener or sugar free sweetener.

Nutritional info for 1 1/4 waffles or 2 pancakes:
344 calories ~ 29 grams fat ~ 3 grams net carbs ~17 grams protein

Notes: An "Egg Fast" is a good way to jump-start ketosis, weight loss or move past a plateau or stall. An average fast is 3 to 5 days, but some choose longer. My husband and I find that our hunger was satisfied during the fast and we both lost weight. (Him: 10 pounds Me: 6 pounds)



Variety keeps the meals from being boring. Try flavoring omelet batter with different seasonings and cheese...we used Gouda, cheddar and jack cheeses. We added garlic powder and dried chives, paprika and onion powder, sage and black pepper & a mixture of chili powder, onion powder, cumin, salt and chives, to create different flavors of omelets. (We used beaten eggs without any milk or cream.)
We also ate seasoned scrambled eggs and hard boiled eggs. I topped my hard boiled egg halves with 1 1/2 teaspoons of mayo and a few drops of sriracha sauce. These waffles and crepes are a great option, too!

VERY LOW CARB ~ Mini Peppermint Meringues

Ten of these light and tasty bites have less than 5
total calories and less than 1/4 a gram of carbs
!
Ingredients:
2 large egg whites
1/4 cup Lakanto powdered Monkfruit sweetener (or sweetener of choice)
1/4 teaspoon cream of tartar
1/8 teaspoon peppermint extract
red gel or paste food coloring

parchment paper
pastry bag
star tip

You can choose different food colors for a variety of holidays and sporting events:
red & white ~ Valentines Day & Christmas
green & white ~ Saint Patrick's Day
red, blue & white ~ 4th Of July 
yellow & black ~ Pittsburgh Steelers (My husband's favorite team.)  

Method:
Preheat oven to 240*. Line baking sheets with parchment paper.
In a large mixing bowl, whisk together egg whites, sweetener and cream of tartar. Set the bowl over, but not in, a saucepan of simmering water. Cook, whisking constantly, until the sugar is dissolved and the whites are very warm to the touch. (Approximately 3 - 5 minutes.)
Remove from heat. Use an electric mixer, beat on low speed, gradually increasing the speed to high, until soft, glossy peaks form. (Approximately 5 - 7 minutes.) Beat in the peppermint extract.
Transfer 1 tablespoon of the meringue to a small bowl and tint with red coloring. Color another tablespoon of meringue with blue coloring. Use a paintbrush or wooden skewer and the tinted red meringue to paint 2 vertical lines in a pastry bag fitted with a 3/4 inch star tip.Repeat with the blue tinted meringue.
Carefully spoon the white meringue into the bag, while being careful not to smear the red and blue meringues.




Pipe 1 inch stars onto parchment lined baking sheets. Bake until the meringues are just set on the outside. (Approximately 20 - 30 minutes.) Slide the parchment with cooked meringues onto wire racks to cool completely. Use a spatula or knife to remove the cooled meringues from the parchment paper.



Makes approximately 80 mini meringues. Store in an airtight container.
