Low Carb Shrimp & Avocado Cobb Salad

One dinner serving of Shrimp Cobb Salad
Ingredients:
2/3 cup cooked, peeled & deveined small salad shrimp
2 tablespoons butter
red pepper sauce to taste
1 1/2 cup chopped salad greens
approximately 1/4 cup blue cheese dressing
1 small avocado, chopped
1 hard boiled egg, chopped
3 slices crisp bacon, chopped 
3 tablespoons crumbled Gorgonzola cheese
2 blue cheese stuffed green olives, sliced
1 tablespoon shelled pumpkin seeds
fresh ground black pepper

Method:
Quickly  saute the shrimp in the butter and red pepper sauce. Set aside. 
Evenly scatter the salad greens in a salad bowl, or on a plate. Spoon salad dressing evenly over the greens. Arrange the avocado, egg, bacon, cheese, sliced olives and sauteed shrimp around the outer edge of the salad greens. Sprinkle with pumpkin seeds and freshly ground black pepper. Makes one serving. 

Note: Stir to mix the salad and toppings before eating. Enjoy!
