Ingredients:
olive or avocado oil cooking spray
1 pound 93% lean ground beef
1 pound lean ground turkey
1 envelope Optavia Estential Zesty Cheddar & Italian Herb Crunchers*
1/2 cup plain unsweetened almond milk
2 eggs
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/2 teaspoon dried sage, tarragon or oregano**
1/2 teaspoon dried cilantro or parsley**
Method:
Preheat over to 500*. Line two baking sheets, with sides, with aluminum foil. Lightly spray the foil with the cooking oil spray and set aside.
Add both meats and the ground crunchers to a large bowl. Whisk together the milk and eggs. Add to the meats along with the spices. Stir and mix all of the ingredients together. Use your hands to finish mixing all of the ingredients completely. Form small potions of the meat mixture into balls about the size of large marbles. Place about 1 inch apart on the prepared baking sheets. Bake one tray at a time for 5 to 8 minutes, or until the meatballs are fully cooked and no longer pink inside. Transfer to a cooling rack to drain off any drippings. Makes 60 small meatballs. (12 meatballs equal one serving.)
*I prefer to make dry "bread" crumbs with the Zesty Cheddar & Italian Herb Crunchers, but if you want a differnt flavor, you may use Jalapeno Poppers, Honey Mustard & Onion Sticks, or Smokey BBQ crunchers.
**Choose the herbs for the flavor you desire.
Each Serving equals: 1 lean, 4/5 condiment (I counted as one condiment), 1/5 fueling & 0.1 (1/100) snack (Basically zero)
