This delicious, creamy & savory Chicken skillet is very simple to make! |
Ingredients:
1 tablespoon butter
4 cloves of garlic, minced
2 teaspoons dried minced onion
1/4 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano leaves
1 cup halved grape tomatoes
1 cup zero carb chicken bone broth
4 ounces (1/2 cup) lowfat cream cheese**
2 triangles of lite Laughing Cow cheese**
2 cups baby spinach leaves
20 ounces cooked boneless, skinless chicken breasts, cut into bite sized pieces**
Method:
Melt the butter, in a large skillet, over low heat. Add the garlic, minced onion, salt, pepper, oregano and tomatoes to the skillet. Slowly stir in the broth. Heat over medium low heat. Add the cream and laughing cow cheeses and gently whisk until melted and blended in. Smmer for 3 minutes. Stir in the spinach and chicken. and cook over medium low heat until the chicken is warmed. Serve immediately. Makes 4 servings.
**If you are not following a low fat meal plan, regular cheese may be used.

Notes: This dish is simple to make, but tastes gourmet! ~ ~ ~ For a complete low carb meal, serve with 1 cup mashed cauliflower, 1 cup cauliflower rice, 2 cups salad greens or 1 cup salad greens with 1/2 cup of cucumber.
