Lean & Green Grilled Chicken & Avocado Caprese Salad

A fresh, Delicious & Satisfying Salad.

Ingredients: 

1 pound grilled chicken breasts

8 ounces part skim mozzarella cheese**

2 cups halved cherry tomatoes

6 ounces avocado slices

8 cups chopped or torn Romaine lettuce

2 cups fresh basil leaves

4 tablespoons capers (optional)

3/4 cup Walden Farms 0 calorie Balsamic Dressing

Method:

Cut the chicken breasts into bite sized pieces and set aside. Chop the cheese into cubes and set aside. Chop or tear the basil into smaller pieces. Place 2 cups of lettuce onto each of 4 serving plates. Top with 4 ounces of the chicken, 1/2 cup of tomato halves and 2 ounces of the cheese. Sprinkle a 1/2 cup of the basil leaves and 1 tablespoon of capers on top of each salad. Garnish with 1 1/2 ounces of the avocado slices and sprinkle with 3 tablespoons of the dressing. Makes 4 servings.

**If prefered, fresh mozzarella may be used.

Note: I served this salad for lunch to family. It is my son's favorite salad that he  orders often at restaurants ~ He was very pleased with this version
