Stove Top Or Slow Cooker Low Carb Chili Without Beans (Lean & Green Version)

This simple & flavorful chili is satisfying
 and has just the right amount of spice!
Ingredients:

36 ounces lean ground beef

1 1/2 cups finely chopped red bell pepper (approximately 1 large pepper)

4 cloves garlic, minced

1 (28 ounce) can diced tomatoes

2 (10 ounce) cans Rotel mild diced tomatoes & green chiles

1 cup water

2 1/2 teaspoons chili powder

1/2 teaspoon pink Himalayan or sea salt

1 1/2 teaspoons dried minced onion

1/4 teaspoon dried crushed red chiles

1/2 teaspoon cumin

3 ounces lowfat cheddar, jack or cheese of choice, 3/4 cup grated

Stove Top Method:

Add the ground beef and bell pepper to a large Dutch oven or pot. Stir and cook over medium low heat just until the meat is browned. Once the beef is browned, drain in a collander. Add the garlic to the pot. Stir and cook over low heat for 2 to 3 minutes. Return the meat and bell pepper to the pot. Stir in the large can of tomotoes, the 2 cans of Rotel, water and spices. 

Cover and simmer on lowest heat for 2 hours or longer. Ladel 1 1/2 cups of chili into each serving bowl. Makes 6 servings. Top each serving with a half ounce (2 tablespoons) of grated cheese.

 Slow Cooker Method:

Add the ground beef and bell pepper to a large skillet. Stir and cook over medium low heat just until the meat is browned. Once the beef is browned, drain in a collander. Add the garlic to the pot. Stir and cook over low heat for 2 to 3 minutes. Remove from heat.  Add the cooked meat, bell pepper and garlic to a slow cooker. Stir in the large can of tomotoes, the 2 cans of Rotel, water and spices. Cover and simmer on low heat for 5 to 6 hours, or on high for 3 to 4 hours. Makes 6 servings.  Top each serving with a half ounce (2 tablespoons) of grated cheese.

Each serving equals: 1 lean, 2 1/2 greens & 3 condiments (You can add a snack of 1/2 cup celery, bell pepper, grape or cherry tomatoes to complete your daily green servings.)

Nutritional info per serving, approximately: 481.5 calories ~ 21.7 grams fat ~ 14 grams carbs ~ 10.6 grams net carbs ~ 54.5 grams protein

Notes: This chili is good enough to serve to company. If serving to children, or others who are not following a low carb meal plan, you can serve over a pasta like rotini, elbow, ziti, penne or bowtie and top with extra cheese. Additional garnish options are sour cream and diced red onions.
