Ingredients:
4 cups avocados, diced medium
2 cups grape or cherry tomatoes
2 cups English cucumbers, chopped**
1 cup red onion, diced
1/4 cup fresh cilantro, chopped
2 teaspoons fresh garlic, minced
salt
fresh black pepper
2 tablespoons lime juice
1/4 cup olive oil
butter leaf lettuce, if desired
Method:
Add the avocados, tomatoes, cucumbers, onion, cilantro and garlic to a bowl. Sprinkle with salt and papper to taste. Combine the juice and oil. Pour over the vegetables and gently toss or stir to coat. If desired, serve on top of lettuce leaves.
