Optavia Roasted Garlic Creamy Smashed Potatoes Fueling & Fried Egg Hack (Lean & Green)

This enhanced fueling is a tasty option
for breakfast, snack or a light lunch.

Ingredients: 

1 Roasted Garlic Creamy Smashed Potatoes fueling

1/4 cup hot water

mini waffle maker

olive or avocado oil cooking spray

1 egg

1/2 ounce (2 tablespoons) grated reduced fat cheese

2 tablespoons homemade low carb picante sauce* or a teaspoon of siracha, Frank's Red Hot Sauce, or sauce of choice (optional)

Method:

Empty the potato powder into a bowl. Stir in the hot water, mixing just until all the powder is moistened and mixed in.

Lightly spray the inside of the waffle iron with the cooking spray. Add all of the potato mixture to the prepared waffle iron and cook for 3 to 4 minutes, or until the potatoes reach the crispness that you prefer. Place the waffled potato onto a serving plate. Lightly spray a small frying pan with the cooking spray. Quickly fry an over easy egg and place on top of the potato waffle. Sprinkle with the grated cheese. If desired, top with one or two tablespoons of salsa or a drizzle of the hot sauce of your choice. 

Notes: One serving (with 2 tablespoons salsa) equals: 1 fueling, 5/8 lean & 2 condiments. 

One serving (with 1 tablespoon salsa or 2 tablespoons hot sauce) equals: 1 fueling, 5/8 lean & 1 condiment.

For an additional meal a salad can be prepared with 3 green servings, 1 1/2 ounces diced reduced fat cheese (3/8 lean serving) and 2 tablespoons Walden Farms salad dressing (1 condiment)  

I enjoyed this fueling for breakfast and then ate a salad later on. Both were quite good!
