This is my version of a popular low carb salad. It is so tasty & better than a Big Mac! It is so simple to make and is one of my favorites❣️ |
cooking spray
1 pound 95% to 97% lean ground beef
2 teaspoons dried minced onion
1/2 cup Walden Farms Thousand Island dressing
1/2 teaspoon onion powder
1/2 teaspoon white vinegar
8 cups chopped romaine or butter leaf lettuce
2 cups halved grape or cherry tomatoes
8 mini light Babybel cheese or 8 ounces (2 cups) reduced fat cheddar or jack cheese
8 ounces dill pickle slices ~ about 40 slices (I prefer the pickle slices in half )
Method:
Lightly grease a skillet with cooking spray. Heat the beef & minced onion over medium heat, just until the beef is completely cooked and browned. Drain any fat from the meat and set aside.
In a small bowl, stir together the salad dressing, onion powder and vinegar. Set aside.
Place 2 cups of lettuce on a serving plate. Top with 1/2 cup tomatoes. Sprinkle 3 ounces of the meat on top of the salad. Grate 2 babybel cheeses over the meat, or sprinkle with a 1/2 cup of grated cheddar. Drizzle 2 tablespoons of dressing over all. Garnish with 10 dill pickle slices. Makes 4 servings
Each Serving equals: 1 lean, 3 greens, 2 1/4 condiments & 1 snack
Nutritional info per serving, approximately: 399 calories ~ 18.25 grams fat ~ 11.25 grams carbs ~ 6.76 grams net carbs ~ 48.23 grams protein
Note: The entire family can enjoy this salad, but I like it so much that I save the meat for additional servings and reheat to use and enjoy for other meals throughout the week. The extra dressing and meat can be stored for a week in the refrigerator.
