Salted Lime Rickey (With Or Without Vodka) KETO Friendly

A Simple, Tasty & Refreshing drink.
(With or without vodka)
Ingredients:
10 fresh pitted bing cherries or frozen pitted dark cherries (room temperature)
1 lime, sliced in half circles
2 tablespoons Lakanto Classic Monkfruit Sweetener (or sweetener of choice)
1/4 teaspoon pink Himalayan salt (or sea salt)
8 ounces (1 cup) chilled club soda
6 tablespoons vodka (optional)
extra lime slices for garnish (optional)

Method:
Place the cherries, lime slices, sweetener and salt in a cocktail shaker, or measuring cup. 


"Muddle" together, by pressing and twisting the handle of a wooden spoon, lightly. (Just press down and twist your wrist, then release, 2 or three times., until the juices are released.) If muddling in a measuring cup, transfer to a shaker container. Add ice cubes to the shaker, cover and shake well. Strain into two ice filled highball glasses, dividing evenly between the glasses. Stir 4 ounces (1/2 cup) of club soda into each glass and stir. Serve as an alcohol free beverage. Or, if desired, stir 3 tablespoons of vodka into each glass. Serve and enjoy. Makes 2 servings.

Notes: 
The "Salted Lime Rickey" is inspired by a Vietnamese style salted limeade and is a very refreshing beverage with or without vodka. 
Other lower carb fruits, such as raspberries, blueberries or blackberries, can be used in place of the cherries. 
If you are not following a low carb meal plan, sugar (or extra fine sugar) can be used instead of an alternative sweetener.
