This cauliflower is so tasty, that it's almost addictive! |
olive oil cooking spray
2 tablespoon butter
2 tablespoons diced onion
1 head cauliflower, cut into 1 inch florets
4 ounces cream cheese
1/4 cup heavy cream
1 teaspoon pink Himalayan salt or sea salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon garlic powder
4 ounces Pepper Jack cheese, grated**
6 slices crisps bacon, chopped
Method:
Grease the inside of a slow cooker with the olive oil spray. Place the butter and onion in the slow cooker. Add the cauliflower, cream cheese, heavy cream and spices. Cook on low heat for 3 hours.
Stir in the grated cheese and continue to cook for another 30 to 60 minutes, or until the cauliflower is tender. Sprinkle with bacon and serve. Makes 6 servings.
Notes:
**If you prefer a milder flavor, without peppers, you can substitute Monterrey Jack cheese for the pepper jack cheese.
If desired. use an immersion blender, inside of the slow cooker, to create a puree. You also can add the cooked cauliflower and sauce to a standard blender, to make a puree. Spoon the puree onto a plate and top with a grilled (or baked) piece of fish, pork or chicken. Sauteed shrimp also pairs nicely with the pureed cauliflower.

I do not like cauliflower, but I loved this dish! My non-KETO husband, who does not like pepper jack cheese, loved this, too! (He preferred the immersion blender method over the puree created in a standard blender.)
