KETO Friendly Almond Float (Asian style gelatin with fruit.)

This is a light & healthy Asian Style almond gelatin with fruit.

Ingredients:
2 envelopes unflavored gelatin
1 3/4 cups of cold water
1 1/2 cups almond milk (or 3/4 cup almond milk and 3/4 cup heavy cream)
1 tablespoon almond extract (or if preferred, vanilla extract)
1/3 cup Lakanto classic monkfruit sweetener (or, sweetener of choice)
fresh berries (optional)

Method:
In a large bowl sprinkle gelatin over 1/2 cup cold water and let soften for 5 minutes. Bring the remaining
1 1/4 cups of water to a boil in a saucepan. Add to the softened gelatin along with the sweetener. Stir until dissolved and clear. Add the almond milk and almond extract. Pour mixture into a square pan. Refrigerate for 1 to 3 hours, until completely set.

8 inch square pan of set almond jello.
Cut into cubes. Divide cubes evenly between six individual serving dishes. Garnish each serving with 1/8 cup of blueberries, raspberries or sliced strawberries. Makes 6 servings.

Notes: I first made this recipe in the early 1980's. It is very simple to mix together and pairs nicely with Asian dishes and summer meals. (I always have the ingredients on hand in my refrigerator and pantry.)
