This is a quick & easy, delicious & flavorful fresh spinach side dish. |
2 2/3 cups fresh spinach (I use baby spinach leaves.)
4 tablespoons (1/2 a stick) butter
1 teaspoon ground nutmeg
1/8 teaspoon sea salt (optional)
Method:
Melt the butter, in a large skillet, over medium heat. Stir, for 3 minutes, as the butter bubbles and browns. (The butter will turn a caramel color.) Stir in the nutmeg. Remove the skillet from the heat. Add the spinach, gently stirring just until wilted and coated with the butter. If desired, season with salt. Serve immediately. Serves 2.

Notes: For 1 serving, just cut the recipe in half. My husband, who does not like cooked spinach, thought that the taste and texture of this dish was quite good. He liked it!
