A very refreshing beverage as is, or spiked. Plus, this is a healthy, fat burning blend of juices! |
2 tablespoons fresh mint leaves
2 tablespoons Lakanto Classic Monkfruit sweetener (or sweetener of choice)***
1 1/2 cups chilled water
8 inches fresh cucumber
juice from 2 lemons
fresh mint or lemon slices for garnish (optional)
3/4 cup vodka (optional)

Method:
Peel and dice the cucumber. Add to a blender container along with the mint, sweetener, water and lemon juice. Blend until all of the ingredients are well mixed and smooth.
Pour through a sieve, pressing to release all of the liquid from the pulp. Discard the pulp. Chill.
For a refreshing alcohol free beverage:
Divide the juice evenly between 3 ice filled glasses ~ 6 ounces per glass. If desired, garnish each glass with fresh mint or a lemon slice. Makes 3 servings.
For a low calorie cocktail:
Place ice in a shaker container. Add half of the blended juice and 1/4 cup vodka. Shake and divide evenly between 3 cocktail glasses. Repeat with the remaining juice and vodka. Makes enough for 3 refreshing cocktails.
Notes: My husband I really enjoy this "healthy" cocktail ~ it is very tasty and refreshing!
***Granulated sugar maybe used, if you are not following a KETO, Low Carb, or Diabetic meal plan.
