A side flavorful side dish with a grits-like texture. |
Ingredients:
1 1/2 cups chicken, beef, vegetable stock or water
3 cups of riced cauliflower**
1 tablespoon butter
1/4 teaspoon black pepper
1 tablespoon heavy cream
1/3 cup finely grated sharp cheddar cheese
1 teaspoon dried parsley (or, 1 tablespoon chopped fresh parsley)
salt (optional)
Method:
In a saucepan, bring the broth or water to a boil. Add the cauliflower, cover with a lid, and cook over medium heat for about 15 minutes, or until tender. Add the butter, pepper, cream, cheese and parsley, stirring to mix well. Continue cooking, without a lid, until the liquid is absorbed and the grits reach the consistency you desire. Serve as a side dish or top with seafood, pork chops, meatloaf or chicken. Makes 1 3/4 cups. (Three rounded half cup servings.)
**You can purchase "riced" cauliflower at most grocery stores, or you can purchase a whole cauliflower, and rice it yourself, in a food processor. (The cauliflower should resemble the consistency of small granules.)
