Low Carb Roasted Cauliflower "Nachos" (Lean & Green)

This dish is very aromatic and flavorful!

Ingredients:

6 cups chopped cauliflower florets

2 teaspoons avocado or olive oil

1/4 teaspoon sea salt

1/4 teaspoon cumin

1/4 teaspoon chili powder

1/4 teaspoon garlic powder

1 1/4 cups grated reduced fat pepper jack cheese (or other favorite cheese)

1/2 cup salsa*

6 ounces avocado (1 medium avocado)

1 teaspoon lemon juice

Method:

Preheat  oven to 425*. Line a baking sheet with aluminum foil and set aside.

Place the cauliflower florets into a large bowl. Drizzle the oil over the florets. Sprinkle the spices over the cauliflower. Gently stir with a bowl scraper to coat. Spread onto the prepared baking sheet.

Roast for 35 to 40 minutes or until the cauliflower is golden and crispy. While the cauliflower is roasting, peel and slice the avocado into a bowl. Add the lemon juice and mash with a fork or use an immersion blender to make a puree. 

When the cauliflower is roasted, remove from the oven. Sprinkle the cheese over the top and return to the oven for 5 minutes, or just until the cheese is melted. To serve, divide into 4 equal portions on individual serving plates. Top each portion with 2  tablespoons of salsa and 1/4 ( 1/2 ounce) of the mashed avocado. Makes 4 servings.
