🥕 Carrot Cake Cookie Squares ~ Super Quick & Easy❣❣

🥕 These tasty carrot cake cookie
squares are very simple simple
to make for holidays or any day❣

Ingredients:

parchment paper

butter or coconut oil cooking spray

1 stick (1/2 cup) unsalted butter

1 box carrot cake mix

1 egg

1/2 cup raisins

1/2 cup chopped pecans

1 cup white chocolate or caramel chips

4 ounces cream cheese, at room temperature

1 can sweetened condensed milk

1 3/4 cups unsweetened shredded or flaked coconut

Method:

Preheat oven to 350*. Line a 9 x 13 inch baking pan with parchment paper and lightly grease the paper with butter or cooking oil spray. Set aside.

Add the butter, cake mix and egg to a large bowl. Beat with an electric mixer just until all of the ingredients are completely combined and a smooth dough forms. Pat the dough evenly into the prepared pan.

Sprinkle the raisins, pecans and white chocolate chips on top of the dough.

In a medium sized bowl, beat the cream cheese until it is smooth and creamy. Add the condensed milk and continue to mix until well blended. Pour over the the layers in the pan, spreading to cover all.

Sprinkle evenly with the coconut. Press gently into the cream cheese layer. Bake for 30 to 35 minutes or just until the top is golden brown.

Cool completely at room temperature. Chill in the refrigerator for 30 minutes, or longer. Use the parchment paper to lift the baked "cake" from the pan and cut into bars or squares. Makes 30. Store in an airtight container, in the refrigerator, with pieces of parchment or waxed paper in between layers of cookies.

Notes:  These cookies are similar to "magic" cookie bar cookies. Surprisingly, My husband who has never liked carrot cake, really liked these cookies! 

Typically, I do not used packaged mixes, but this recipe turned out so well and is such a crowd pleaser that I am willing to make an exception. With the exception of the cake mix, all of the other ingredients are always on hand in my refrigerator and pantry.
