🍋 This simple and delicious dessert tastes like a lemony creme brulee/pudding cake. |
Ingredients:
butter or coconut cooking spray (for greasing)
4 (7 ounce) ramekins
1/2 cup Lakanto Baking Sweetener**
2 tablespoons unsalted butter, at room temperature
2 room temperature eggs, separated
3 tablespoons almond flour
2 teaspoons finely grated lemon peel
1/4 teaspoon sea salt
1/3 cup Meyer lemon juice
1/3 cup heavy cream
1/8 teaspoon cream of tartar
Lakanto powdered Monkfruit sweetener (optional)
4 to 8 (small to medium) sliced strawberries or blueberries (optional)
whipped cream (optional)
Method:
Preheat oven to 375*. Lightly grease the ramekins. Place on a baking sheet and set aside.
Add the Baking sweetener and butter to a large bowl. Mix with an electric mixer, on low speed, until blended. Add the egg yolks, flour, lemon peel, salt, lemon juice and cream to the butter mixture. Mix until well blended.
In a separate bowl, beat the egg whites and cream of tartar until stiff peaks form. Carefully fold the egg whites into the blended mixture. Divide the batter evenly between the 4 ramekins. Bake for 30 minutes or until golden brown. (Check after 15 to 20 minutes; if brown on top, lightly cover with foil to prevent burning.)
Remove from the oven and cool on a rack and cool for 30 minutes. Transfer to the refrigerator to chill for 1 hour or longer. If desired, sift a tablespoon of powdered sweetener over each dessert and/or garnish with sliced strawberries (or blueberries) and a small (2 tablespoon) dollop of whipped cream. Makes 4 servings.
**I use Lakanto Baking Sweetener because it has a finer texture than regular substitute sweeteners. If you do not have the Baking Sweetener in your pantry, you can process the Classic Sweetener (or other granulated sweetener) in a food processor, to create a finer texture.
