Sunshine Salad

Light & Fresh Sunshine Salad 

Ingredients:
2 envelopes unflavored gelatin (Knox or another brand)
1 3/4 cups orange juice
1/4 cup honey
1/4 cup lemon juice
1 1/2 cups sliced carrots
1 (8 ounce) can crushed pineapple 

Method:
Put 1/2 cup of the orange juice in a 5 cup blender. Sprinkle gelatin over orange juice in blender and let sit for 5 minutes. Bring remaining orange juice and honey to a boil in a saucepan. Add to blender and process at low speed until the gelatin is dissolved, about 2 minutes. Add lemon juice and process at high speed until thoroughly blended. Add carrot slices. Chop by turning blender on and off at high speed a few times.


Pour blended mixture into an 8 inch square pan. Stir in pineapple and chill until firm, about 2 hours. Cut into squares. Makes 9 servings.


Note: This is a refreshing salad that is simple to make....a nice vegetable and fruit side dish or snack.
