Grandma Kathy's Chicken Divan Casserole

A tasty casserole with chicken, broccoli and cheese.

Ingredients:
5 boneless and skinless chicken breasts 
4 - 5 cups chopped steamed broccoli (not mushy)
2 cans cream of chicken soup concentrate (or 1 can cream of chicken and 1 can of cream of mushroom)
1 cup mayonnaise (or Greek yogurt)
2 teaspoons lemon juice
1/2 teaspoon curry powder
1 1/2 cups grated sharp cheddar cheese
4 slices of bread
4 tablespoons butter
1/4 cup Parmesan cheese

Method:
Preheat oven to 400*. Wrap chicken breasts in foil and bake for 35 - 50 minutes, or until cooked through. Reduce oven heat to 350*. Cut chicken into bite sized pieces. Remove crusts from bread and cut into cubes. Melt butter in a frying pan. Add bread cubes and Parmesan cheese. Stir gently until bread cubes are coated with butter and cheese. Butter a 9 x 13 inch baking dish. Place broccoli in bottom of baking dish. Top with cooked chicken. Mix together soup, mayonnaise, lemon juice, curry powder and 1 cup cheddar cheese. Spread soup mixture on top of chicken. Sprinkle with remaining 1/2 cup of cheddar cheese. Top with bread cubes. Bake for 25 - 30 minutes. Serves 6 - 8.

Note: Grandma Kathy made good old fashioned comfort food to feed her family of seven. This recipe has been a family favorite for 3 generations.
