A Delicious & Refreshing cocktail. |
8 ounces fresh strawberries
1/3 cup Lakanto Baking sweetener**
2 cups ice cubes
1/2 - 3/4 cup tequila
Method:
Place the strawberries in a food processor and process until they are completely pureed. Stir the puree through a sieve to remove the seeds. Add the strained puree to a blender with the sweetener and blend just until mixed. Add the ice and tequila and blend until all of the ice is completely crushed and blended in. Pour into 2 serving glasses. Enjoy!
**The Baking sweetener has a much finer texture than the Classic sweetener and really produces superior baked goods. (The Classic sweetener can be made finer by blending in a food processor.)
If you are not following a sugar free diet, extra fine baker's sugar may be used. If you cannot find ultrafine Baker's sugar at your grocery store, you can make your own, by placing in a food processor for several minutes. It should be processed until it is finer and a little powdery, somewhat like very fine sand.
Nutritional info per serving, approximately:
36.4 calories ~ .35 grams fat ~ 6.5 grams net carbs ~ .75 grams protein
Note: On Cinco De Mayo, I created this recipe for my 95 year old uncle, because it is what he orders at his favorite Mexican restaurant.
He said the this one tasted better than the restaurant version!
