Here is traditional recipe that a Filipino friend gave me in the early 1980's.
Ingredients
1 9.5 ounce package of udon noodles, soaked in hot water to soften, rinsed in cold water and drained
1/2 chicken, roasted and shredded
2 cups chopped celery
2 carrots cut into thin strips
8 - 10 dried mushrooms, soaked 10 minutes, drained and cut into 3 pieces
2 cloves garlic, minced
1 small onion, sliced
4 Tablespoons soy sauce
1/2 teaspoon pepper
1 Tablespoon oil
Method
Sauté garlic, onion and chicken in oil. Add mushrooms, carrots and celery. Season with pepper. Cook for 5 - 8 minutes. Add noodles. Add soy sauce. Continue to stir and mix together. Add 2 Tablespoons water. Cover pan and cook on low heat for 15 minutes. or until noodles are soft enough to eat.
If desired, garnish with finely chopped chives and hard boiled eggs. Serve with lemon or lime wedges to be added to individual servings.
