Simple & Creamy Homemade Mint Chip Ice Cream

Creamy & Delicious!
This mint chip ice cream
is very simple to make.

Ingredients:

6 cups heavy cream

3 cups half & half

3 cups sugar

1 tablespoon lemon juice

1/8 teaspoon coarse sea salt

1/2 teaspoon pure vanilla extract

1 1/2 teaspoons peppermint extract

4 to 6 drops of green food coloring (optional)

2 cups mini semi sweet chocolate chips

1 small bag of ice

rock salt

Method:

In a large bowl, stir together the cream, half & half, sugar, juice, salt, extracts and food coloring. Pour into the cannister of an ice cream maker. Stir in the chocolate chips. Follow the instructions for the ice cream maker. When the ice cream has finished processing, transfer to airtight containers and place in the freezer for several hours. Makes about 4 quarts.

Note: This ice cream is wonderful by itself, but if desired, drizzle with chocolate syrup and top with a dollop of whipped cream.
