These thin & crispy M & M cookies made with pastel candies were a big hit! 🩷🩵💛💚 |
Ingredients:
1 cup (2 sticks) butter, softened at room temperature1 cup light or dark brown sugar
3/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1/2 teaspoon sea salt (optional)
2 cups M&M candies
Method:
In a large bowl, cream together the butter and sugars, for 1 minute, with an electric mixer.
Mix in the eggs and vanilla until blended. Sift together the flour, baking soda and salt.
Add the dry ingredients to the butter mixture and mix just until blended.
Divide the dough in half. Form each portion into a log about 2 inches in diameter. Wrap the logs in waxed paper and refrigerate the dough for 30 minutes, or longer.
Preheat oven to 375*. Line baking sheets with parchment paper.
Unwrap a dough log. Slice in 1/4 inch slices and place on the prepared cookie sheets, about 2 inches apart. Decorate the top of each dough slice with as many M&M's that you can press on top.
Bake for 7 to 8 minutes, or until the tops are just lightly browned.

Allow the cookies to sit on the baking sheet for a couple of minutes, before removing to a rack to finish cooling.
Store in an airtight container, in the refrigerator. Makes about 4 dozen cookies.

Note: My dough logs were not perfectly round, which workrd nicely to make "egg" shaped cookies for Easter.
